Amaretto Frosted Brownies! (Family Recipe)

WOOHOO!! Amaretto brownie time! These are always a HUGE hit at our family gatherings and they’re always the first dessert to disappear. We’ve been bringing them to Thanksgiving, Easter and Christmas for years - i’m pretty sure at this point if we stopped there would be a mutiny.

We can’t take credit for creating the recipe, although we have tweaked it over the years. It came from an ooold cookbook in my mom’s kitchen and a quick google search told me it doesn’t yet seem to exist on the internet. ENTER: ME!

**Disclaimer: I made this batch quickly for some photos and slightly cheated on the final steps, resulting in a less-than-gorgeous swirl effect. Normally, they’re much prettier! I’m sure yours will be gorgeous. Here we go!

Amaretto Frosted Brownies

You’ll need:

2 Boxes of Brownie Mix + Whatever they need (usually eggs, vegetable oil)

Sweet Frosting

4 Tablespoons tub margarine

4 oz light cream cheese, room temp (so half of a packet)

3 cups powdered sugar

1 teaspoon almond extract

1-2 tablespoons milk

Amaretto Chocolate Topping

1 square (1 oz) semi-sweet chocolate

2 teaspoons tub margarine

6 Tablespoons cocoa powder

1 Tablespoon Sugar

1 Tablespoon cornstarch

1/4 cup corn syrup

1 Tablespoon skim milk

1 Tablespoon Amaretto

Directions

  1. Make brownies! Simple enough. You got this.

  2. Using a hand mixer of fancy schmancy kitchenaid mixer, cream together margarine and cream cheese. Add in powdered sugar and almond extract gradually. Add juuuUUuuust enough milk to make it nice and smooth and spreadable. Spread over cooled brownies! Woo! All done. With that part.

  3. (So the topping is a little more tricky to make and i, admittedly, microwaved the chocolate instead of letting it cook during these photos because I was in a hurry. So, just ignore the photos and do it the right way and yours will look FABULOUS.) HERE WE GO: mix together cocoa powder, sugar and cornstarch in a medium bowl. Gradually add in corn syrup and milk.

  4. In a saucepan, melt chocolate square and margarine. Add in cocoa mixture from step 3 and keep cooking, until everything is well mixed and smooth. Remove from heat. Mix in amaretto.

  5. While the mixture is still smooth and spreadable and warm, we spread it onto the white icing in horizontal strips going all the way down the pan (see photo). Once you’ve created your lines, take a clean knife and a paper towel and create long lines in the design - you aren’t cutting the brownies, just sort of swirling together the design.

  6. WHALA! All done!
